Cook spaghetti according to package instructions, reserve.
In a sauce pan, sauté carrots and brocolis with a drizzle of olive oil for aproximately 5 minutes or until carrot starts getting soft. Add bell pepper and sauté until bell pepper start getting goldish.
Add curry powder and salt, mix until curry ‘sticks’ to the vegetables.
Add coconut milk, bring it to a boil, lower heat and let it simmer until it gets in a sauce consistency tha pleases you.
